The craft cocktail movement has taken off around the world in recent years. Traditional recipes have been revived and celebrated, while spectacular new innovations grace the drinks menus of high-end barrooms and fashionable speakeasies alike. A well-made mixed drink crafted with local ingredients can immerse you in the destination, and a recipe can become a souvenir. Here are our suggestions for bars and cocktails that you’ll be talking about and recreating for years to come.
Singapore
When Singaporean bartender Ngiam Tong Boon made a gin sling variation in 1915, it didn’t take long for the Singapore Sling to take off. For a taste of that old-school elegance, order one at Brasserie Astoria in the grand Victoria Concert Hall, where you can sit underneath glinting chandeliers. For a mid-century modern vibe, the influences of Edward Hopper abound at Night Hawk. The sleek lines, warm color palettes and leather-backed bar stools create an evocative retro lounge ambiance. If you prefer a speakeasy style, then the Cat Bite Club can scratch that itch stylishly. At Conrad Singapore Orchard, trust in the mixologists at Manhattan, which consistently ranks in the world's 50 best bars. Concoctions in this sophisticated hotel bar are created with house-made ingredients from the hotel's barrel room.
Anguilla
Since most cocktails combine spirits, sugar and fruit juice, it’s no surprise that a mixed drink is an ideal way to cool off while in the Caribbean. Cocktail bars on the island tend to be a more casual affair, while the flavors provide an elevated experience. Visit beachfront Johnno’s Beach Stop, an Anguilla institution for more than 30 years, for their Sunday afternoon jazz brunch with a fresh-fruit daiquiri. For a more tranquil (and potentially romantic) experience, head to Meze, a Moroccan-themed bar that sets the mood with low lighting, colorful patterned decor and stellar drinks. Rum connoisseurs looking for expertly crafted cocktails that perfectly complement the spirit should head to Rhum Room at Zemi Beach House, LXR Hotels & Resorts. This sophisticated cocktail lounge features 140 types of small-batch, single-estate rums. Try a few during a curated, educational tasting and pair them with a cigar for the quintessential Caribbean rum experience. Cocktails here are a great idea, too, with the Caribbean Milk Punch never disappointing Rhum Room patrons.
Los Cabos
Los Cabos has a relatively young but dynamic craft cocktail scene. The fresh fruit and local produce here make for exceptional ingredients, especially when mixed with the agave of regional, small-batch tequilas and mezcals. To test this claim, join the locals at Punta Médano Ceviche Bar, where adventurous drinkers should try the Sea Star, a spicy-sweet cocktail tinted black with squid ink. Of course, don’t forget to try the fresh ceviche as well. Learn more about the intricacies of tequila and mezcal with a guided tasting at Waldorf Astoria Los Cabos Pedregal. Hosted at the resort’s Agave Study at Peacock Alley, the thorough experience includes curated spirits paired with local delicacies. Then you’ll be able to more mindfully savor the drinks at the hotel’s signature bar Don Manuel’s, with its extensive list of rare spirits from around Mexico.
There’s nothing like enjoying a culinary creation made with local, seasonal ingredients, and that extends beyond meals to cocktail menus. Whether it’s a simply made classic or an innovative new concoction, take note of the flavors so you can revisit the ingredients at home and stoke some nostalgia for your trip. Make a toast to cocktail-led adventures, and cheers to your next unforgettable vacation.
