We don’t know about you, but as we start to say goodbye to the dog days of summer, our summer cocktail hours ramp up! After all, is there anything better than a refreshing (and delicious) cocktail to beat the heat? Plus, when the drink in question is brightly colored and comes with a fun, tropical-inspired garnish, it’s almost too good to resist.
Enter the simple perfection of a mai tai! This tropical drink has a short ingredient list, is just the right amount of sweet to satisfy without overwhelming thanks to the nutty flavor of orgeat syrup and best of all takes just minutes to make. The dark rum and colorful curacao of the mai tai make this the perfect cocktail for backyard barbecues, retro tiki parties or merely a toast to summer sunsets.

Summer Mai Tai
(Serves one)
Ingredients
- 1 ½ ounces lime juice
- 1 ounce simple syrup
- ½ ounce ginger syrup
- 2 ounces grapefruit soda
- ½ ounce blue curacao
- ½ ounce dark rum
Optional
lemon wedge
Preparation
Fill tall glass completely with ice and set aside.
Combine lime juice, simple syrup, ginger syrup, grapefruit soda and ice in a shaker.
Cover and shake well.
Strain and pour into the tall glass.
Top with blue curacao and then rum to create an ombre effect.
Garnish with a lemon wedge and enjoy!
